Cleaning 101

Tips to keep your establishment gleaming.

With so much going on in your restaurant, a few great cleaning tips could save you lots of time. Here's a handy little list that'll cover most of the big challenges you'll run into.

Appliances

Shine with rubbing alcohol.

Blenders

Fill it part way with hot water, add a drop of dish detergent, cover and turn it on for a few seconds. Rinse and drain dry.

Can Openers

Use an old toothbrush to loosen grime, then run a damp paper towel through the cutting process to thoroughly clean blades.

Cutting Boards

To eliminate odors, rub lemon or lime. To disinfect, pour liquid bleach and rinse well.

Formica Countertops

Polish with club soda.

Glass

Rub with a lemon slice.

Grills

Once cooled, place grills in a plastic garbage bag with ½ cup of dishwasher detergent. Pour hot water to cover the grill, seal and shake to dissolve powder. After several hours, rinse thoroughly. And remember, before ever using your grill, spray it with vegetable oil.

Meat Grinders

Run a piece of bread through it before washing.

Sinks

For grease clogs, pour 1 cup salt and 1 cup baking soda, followed by boiling water.

Stainless Steel

Remove water spots with a cloth and rubbing alcohol.

Restaurant Cleaning 101

The Manager's Walk

Most restaurant managers have a routine to identify cleaning and maintenance requirements. It's called a “Manager's walk.” We all check the obvious, but here are FIVE pointers on what to look for on your walk:

  1. There are many obvious areas to inspect – table tops and bases, side stands and washrooms. But also, make sure you have clean- as-new condiment dispensers and tableware.
  2. Once a week, check all upper areas of your restaurant, such as ledges and air ducts, for unsightly dust and grease.
  3. If you have booths or banquettes, check the crevices between backs and bottoms for debris. These are notorious for accumulating crumbs and other debris that attract pests.
  4. Inspect the entire kitchen for cleanliness, especially under tables and appliances. Get down on your hands and knees with a flashlight. You'll be amazed at what you'll find.
  5. Inspect the alleyways outside the rear of the restaurant to ensure it too is clean. You may be surprised how many people drive or walk by this area. It all sends a message.

Most importantly, develop an inspection checklist that is followed religiously. We don't always see what others see when they enter our establishments.

Here are a host of tips that will help you provide the cleanest dining environment for your staff and guests – and may also prolong the life of your equipment.

  • Pressure wash floors and building exterior
  • Wash kitchen hoods
  • Clean exhaust fans, ducts, filters
  • Wipe down tables
  • Empty grease traps
  • Mop and wax floors
  • Vacuum waiting areas
  • Sanitize bathrooms
  • Disinfect and polish sinks, mirrors, toilets and urinals
  • Wash internal and external windows
  • Dust windows, blinds, air conditioner vents, and wall hangings
  • Refill consumables, including paper products and soap
  • Remove wayward food and grime from dumpster area

Did you know?

You can create your own deodorizer by boiling a teaspoon of cloves in a half cup of water to neutralize cooking odors.
