Our Best Comfort Foods Ever
Harness the power of familiar favorites.
You could argue that comfort foods are always in fashion, but they are particularly en vogue today. In harder economic times, folks crave home-style dishes that remind them of better times. Comfort foods and colder seasons walk hand in hand, too. Warmth, satisfaction and rich flavors are the order of the day. So, now is the time to build out your menu with inviting, delicious recipes.
But have today's more sophisticated diners outgrown comfort food? We don't think so, and neither does Gourmet magazine, which, on its January cover, chose to cast aside fancy fare and feature a big serving of spaghetti and meatballs. National Public Radio's food commentator Bonny Wolf was quoted as saying that “comfort, value and simplicity” will color the food scene this year. And in its 2009 Menu Trends Forecast, Mintel Menu Insights says, “Often connected to times of economic recession, comfort food is what people crave when they're feeling down. Expect this phenomenon to hold true in 2009 as people look for familiar favorites on the menu.”
Inspiration
Our team of chefs came up with nine new comfort-food recipes that answer the call for familiar food at its best. “We looked at key factors when developing these recipes,” says Chef Jeff Basalik, Executive Corporate Chef for the Kraft Culinary Centre. “They need to soothe your soul and bring back childhood memories — that's different for everyone, but there's a unifying element to comfort foods, and I think we captured that here.”

Hearty Short Ribs with Mashed Butternut Squash Beef short ribs are a value cut from which chefs can coax succulent, rich flavor when they cook them slowly and at a low temperature. Here, they're braised in a sauce deepened by Gevalia Kaffe and A.1. Thick & Hearty. For seasonality and another dollop of comfort, the ribs are served atop mashed butternut squash, enriched with Philadelphia Cream Cheese, Monterey Jack cheese and milk. |

Turkey-Poblano BBQ Meatloaf with Cheesy Mashed Potatoes Our chefs downsized the beloved meatloaf into muffin-size, which offers a wonderful, homey profile in an appealing presentation. They use ground turkey for a more neutral base, which absorbs beautifully the flavors of caramelized onion, roasted poblano chiles, Grey Poupon, apricot preserves and Bull's-Eye Original Barbecue Sauce. Stove Top Chicken Flavored Stuffing Mix adds moisture, binding and familiarity. Perfect as bar food, party food, appetizer or entrée, these mini meatloaves are topped with cheesy mashed potatoes that bring home the comfort-food sensibility. |

Stuffed Peppers with Andouille Sausage and Bistro Mashed Potatoes This is a fantastic comfort-food entrée, with a little bit of down-home goodness thrown in. Red and yellow peppers are stuffed with smoky andouille sausage, Ritz Crackers, ground beef, Northern beans and Kraft Mayo Real Mayonnaise. Grey Poupon Bistro Sauce adds spice to the piped-in mashed potatoes and Philadelphia Cream Cheese brings in a wonderful creaminess and tang. Braised in tomato purée, Kraft Original Barbecue Sauce and beef broth, the stuffed peppers are hearty and full of big flavor. |

Savory Mac & Cheese with Caramelized Onions & Crispy Bacon Perhaps the ultimate comfort food, our recipe here is decidedly grown up — without forfeiting the cheesy, bubbling goodness that made us fall in love with mac & cheese in the first place. Caramelized onion, crisped Oscar Mayer bacon, fresh parsley and thyme add dimension while a creamy tang and gooey-cheese factor is provided by Philadelphia Cream Cheese and a blend of Monterey Jack and Cheddar cheeses. To add texture and butteriness, a crust made with Ritz Crackers seals the deal. |
