Summer warms the table with its sun-kissed harvest. Here’s a list of some of the season’s best picks, plus a few handy tips to help you treat your customers to some delicious summer servings.

Plate it with pride. Red, white and blue dishes offer a fun way to celebrate Independence Day. Try topping a shortcake with strawberries, blueberries and whip cream for a sweet take on our flag.
Luscious Lemon. To release the juice of a lemon more easily, try microwaving it for a few seconds, then rolling it on the counter before squeezing it.
An apple a day. Some of the best late summer apples to use for cooking are Gravensteins, Lodis, Cortlands, Galas and Ginger Golds. Of course, pies are a great way to showcase the season's best for your customers, but you can add them to summer dishes such as coleslaws, fruit salads and chilled soups.
Eggplant excitement. Choose small, immature eggplants; full-size ones may be bitter. As the flesh discolors rapidly, an eggplant should be cut just before using. Complementary spices include allspice, basil, bay leaves, garlic, chili powder, oregano, sage, thyme and marjoram.
