Simple-Elegance Truffles
Yield: 10 doz. or 120 servings, 1 truffle each
Ingredients   Weights   Measures
 PHILADELPHIA Original Cream Cheese, softened    1 lb. + 8 oz.    -
 OREO Pieces-Small    2 lb. + 4 oz.    2 qt. + 2-1/2 cups
 BAKER'S Semi-Sweet Chocolate, melted    1 lb. + 8 oz.    36 squares
BEAT cream cheese in large mixing bowl fitted with paddle attachment on medium-low speed until creamy. Add OREO Pieces: mix well.
ROLL mixture into 120 (1-inch) balls (or 40 balls for trial recipe). Dip in chocolate.
PLACE in single layer in parchment-lined sheet pans. Refrigerate until firm.
Variation - Raspberry Truffles
Prepare cream cheese mixture as directed. Stir in 1 cup seedless raspberry preserves (or 1/3 cup preserves for trial recipe). Roll into balls as directed; place in parchment-lined sheet pans. Refrigerate 20 min. before dipping into melted chocolate and continuing as directed.
Special Extra
Prepare truffles as directed. Drizzle with melted white chocolate, or sprinkle with additional OREO Pieces, finely chopped nuts or colored sprinkles before refrigerating as directed.
