California Spa Salad
Yield: 30 servings, 1/2 cup each
Ingredients   Weights   Measures
 basmati rice, uncooked    2 lb.    2-1/2 cups
 red peppers, chopped    10 oz.    2-1/2 cups
 green peppers, chopped    10 oz.    2-1/2 cups
 frozen peas, thawed, drained    10 oz.    2-1/2 cups
 dried currants    5 oz.    1 cup
 red onions, chopped    3 oz.    2/3 cup
 fresh parsley, chopped    -    1/4 cup
 KRAFT Light Italian Reduced Fat Dressing    1 lb. + 4 oz.    2-1/2 cups
COOK rice as directed on package; place in large bowl. Cool.
FLUFF rice with fork. Add all remaining ingredients except dressing; mix lightly. Add dressing; toss lightly to coat.
SERVE immediately. Or, cover and refrigerate several hours to serve chilled.
Substitute
Substitute dried cherries for the currants.
