PLACE butter and hot water in large bowl; stir until butter is melted. Add stuffing, apples, raisins and pecans; stir just until stuffing is moistened.
CUT lengthwise slice in one side of each chicken breast to form pocket; fill with 1 rounded tablespoonful stuffing mixture. Place in greased full size hotel pans (or 1 half size pan for trial recipe); brush with barbecue sauce. Spoon remaining stuffing mixture around chicken.
BAKE at 375°F for 40 minutes or until chicken is cooked through (165°F when tested in thickest part).
