Jerk BBQ Sauce
OPEN PIT Original Restaurant Recipe Barbecue Sauce 4 lb. + 2 oz. 1-1/2 qt.
ground allspice - 1-1/2 Tbsp.
dried thyme leaves - 1 Tbsp.
black pepper - 1 Tbsp.
Chicken
broiler-fryer chickens (3 lb.each), cut lengthwise in half 36 lb. 12 each

Directions

JERK BBQ Sauce: Bring all ingredients to boil in saucepan on medium heat, stirring frequently; simmer on medium-low 2 min. Remove from heat.

CHICKEN:
PLACE chicken, cut-sides down, in single layer in parchment paper-lined sheet pans. Bake in 350ºF-convection oven 30 to 40 min. or until done (165ºF), brushing evenly with half of the Jerk BBQ Sauce for the last 10 min. Brush with remaining Jerk BBQ Sauce.
