tomatoes, medium dice 9 oz. 1-1/2 cups
tomatillos, medium dice 9 oz. 1-1/2 cups
canned black beans, rinsed 4-1/2 oz. 3/4 cup + 2 Tbsp.
hominy 4-1/2 oz. 3/4 cup + 2 Tbsp.
chipotle peppers in adobo sauce, pureed 6 oz. 3/4 cup
green onions, chopped 2 oz. 1/2 cup + 1 Tbsp.
cilantro, chopped 1/2 oz. 1/2 cup + 1 Tbsp.
poblano chiles, roasted, small dice 9 oz. 3 Tbsp.
salt - 1-1/2 tsp.
BBQ Pork
pulled cooked pork 1 lb. + 2 oz. 1 gal. + 2 cups
BULL'S-EYE Original Barbecue Sauce 2 lb. + 14 oz. 4-1/2 cups
honey wheat sandwich rolls (3 inch), split - 36 each

Directions

TOMATILLO Salsa: Combine ingredients. Refrigerate until ready to use.

BBQ Pork: Cook meat and barbecue sauce in saucepan on medium-low heat until heated through, stirring frequently.

FOR each serving: Cover bottom half of roll with 1/3 cup BBQ Pork; cover with 2 Tbsp. Tomatillo Salsa and top of roll.
