Ingredients

Cooked boneless pork shoulder, pulled, cooled 8 lb. 1-1/2 gals.
pistachios, shelled 9.6 oz. 2 cups
black pepper - 1-1/3 Tbsp.
crushed red pepper - 2 tsp.
OSCAR MAYER Bacon (22-26 Slice Count) 2 lb. + 10.6 oz. 64 slices
Becky Sue's BBQ Sauce 20 oz. 2 cups

Directions

COMBINE all ingredients except bacon and Becky Sue's BBQ Sauce; divide into 16 portions (or into 4 portions for trial recipe), using about 8.5-oz. meat mixture for each portion. Roll each portion into 6-inch log. Wrap 4 bacon slices, evenly spaced, around each log; secure with skewers.

GRILL until bacon is crisp and meat logs are heated through and evenly browned, turning occasionally. Glaze each roll with 2 Tbsp. Becky Sue's BBQ Sauce. Remove from grill. Discard skewers. Cut each log into 4 pieces to serve.
