COMBINE all ingredients except bacon and Becky Sue's BBQ Sauce; divide into 16 portions (or into 4 portions for trial recipe), using about 8.5-oz. meat mixture for each portion. Roll each portion into 6-inch log. Wrap 4 bacon slices, evenly spaced, around each log; secure with skewers.
GRILL until bacon is crisp and meat logs are heated through and evenly browned, turning occasionally. Glaze each roll with 2 Tbsp. Becky Sue's BBQ Sauce. Remove from grill. Discard skewers. Cut each log into 4 pieces to serve.
