COMBINE meat, tomatoes, avocados, beans, peppers, onions, cilantro and 2 cups of the cheese (or 1/2 cup of the cheese for trial recipe).
FOR each pie (8 servings): Spread 1 Tbsp. of the bistro sauce onto each of 3 tortillas. Place 1 of the tortillas on baking sheet; sprinkle with 2 Tbsp. (1 oz.) cheese. Cover with second tortilla, sauce-side down. Top with 1-1/4 cups (10 oz.) of the meat mixture and third tortilla, sauce-side down. Bake in 375ºF-convection oven 8 to 10 min. or until pie is heated through and cheese is melted. Let stand 5 min. before cutting into eight wedges to serve.
