Citrus-Chicken Salad Pitas

Ingredients

cooked chicken, cut into strips 2 lb. + 8 oz. 2 qt.
canned mandarin oranges, drained 2 lb. 1-1/2 qt.
slivered almonds, toasted 5 oz. 1-1/3 cups
KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise 8 oz. 1 cup
fresh parsley, chopped - 1/2 cup
pita breads, cut in half - 16 each
lettuce leaves 2 lb. 32 each

Directions

COMBINE chicken, oranges and nuts in large bowl. Add mayo and parsley; mix lightly. Refrigerate several hours or until chilled.

FOR each serving: Line each of 2 pita halves with 1 lettuce leaf; fill with a #6 scoop of chicken salad.

Variation
Substitute turkey for the chicken, and chopped pecans for the almonds.

Chicken salad can be stored in refrigerator up to 8 hours before using to prepare sandwiches.
