Creamy Filled Crepes with Fruit Compote

24 servings, 2 filled crepes and 1/3 cup fruit compote each

Ingredients

Crepes
eggs 1 lb. 8 each
milk 1 lb. 2 cups
water 1 lb. 2 cups
butter, melted 4 oz. 1/2 cup
flour 1 lb. + 2 oz. 1 qt.
salt - 1 tsp.
Fruit Compote
orange juice 1 lb. 2 cups
sugar 8 oz. 1 cup
Fuji apples, peeled, chopped 2 lb. 1 qt.
unsweetened sliced frozen peaches 1 lb. 1 qt.
unsweetened frozen Bing cherries, halved 1 lb. 2 cups
fresh cranberries 12 oz. 3 cups
gingerroot, grated - 2 Tbsp.
water 2 oz. 1/4 cup
cornstarch - 2-1/2 Tbsp.
Filling
PHILADELPHIA Neufchatel Cheese, softened 4 lb. -
Greek-style yogurt 2 lb. 1 qt.
honey 12 oz. 1 cup
orange zest - 4 tsp.

Directions

CREPES:
BEAT eggs, milk, water and butter in large bowl with whisk until blended. Gradually add flour, beating constantly until well blended. Stir in salt. Let stand 30 min. before using.

HEAT lightly oiled 8-inch saute pan on medium-high heat. Spoon 1/4 cup batter into pan; immediately spread to 5-inch circle. Cook 1 to 2 min. on each side or until golden brown on both sides. Repeat with remaining batter, brushing pan with oil as needed.

FRUIT Compote: Mix orange juice and sugar in large saucepan. Bring to boil on medium heat; cook until sugar is dissolved, stirring occasionally. Stir in fruit and ginger; simmer on medium-low heat until fruit is tender and cranberries "pop." Mix water and cornstarch; add to fruit mixture. Cook until sauce is translucent and slightly thickened, stirring frequently. Keep warm. Or cool, then refrigerate until ready to use.

FILLING:
MIX ingredients. Refrigerate until ready to use.

FOR each serving: Spoon 1/4 cup Filling onto center of each of 2 Crepes; fold sides over filling. Place on serving plate; top with 1/3 cup warm Fruit Compote.

Prepare using frozen cranberries - no need to thaw first.
Make Ahead
The Filling and Fruit Compote can be stored in refrigerator up to 2 days before using as directed. Reheat the compote in saucepan on medium heat just before serving.
