Ingredients

water 5 lb. + 7 oz. 1-1/2 qt.
couscous, uncooked 2 lb. + 5 oz. 1-1/2 qt.
oil 3 oz. 1/3 cup
zucchini, cut lengthwise into quarters, thinly sliced 3 lb. + 3 oz. 1-1/2 qt.
red onions, finely chopped 12 oz. 3 cups
carrots, peeled, shredded 12 oz. 3 cups
frozen BOCA Ground Burger, separated 3 lb. 3 qt.
canned chickpeas (garbanzo beans), drained, rinsed 5 lb. + 10 oz. 2 qt.
California raisins 12 oz. 2 cups
ground cumin - 1 Tbsp.
curry powder - 1 Tbsp.

Directions

BRING water to boil in large saucepan. Add couscous; stir. Remove from heat; cover. Let stand 5 minutes.

HEAT oil in large skillet. Add zucchini, onions and carrots; saute 3 to 4 minutes or until crisp-tender. Add all remaining ingredients except couscous. Cook 8 to 10 minutes or until heated through, stirring occasionally.

ADD couscous; stir gently until well blended.

TIP
For a spicier version, add crushed red pepper, using 1/2 tsp. for every 8 servings.
Substitute vegetable broth for the water.
Dot with butter to keep moist while holding.
