BRING water to boil in large saucepan. Add couscous; stir. Remove from heat; cover. Let stand 5 minutes.
HEAT oil in large skillet. Add zucchini, onions and carrots; saute 3 to 4 minutes or until crisp-tender. Add all remaining ingredients except couscous. Cook 8 to 10 minutes or until heated through, stirring occasionally.
ADD couscous; stir gently until well blended.
