BACON-PEACH Jam: Cook bacon in saucepan until crisp. Add garlic; cook until fragrant. Stir in remaining ingredients; bring to simmer. Cook until reduced by half; cool. Puree until smooth. Set aside.
FRIED Onions: Mix flour, eggs, A.1. and steak seasoning until well blended. Coat onions in batter. Deep fry in 300ºF oil until crispy. Sprinkle with thyme and season with salt and pepper.
FOR each burger: Season 1 patty with salt and pepper. Grill to desired doneness. Top with 1 cheese slice.
PLACE 1 tomato slice on bottom half of roll; top with prepared burger and 1 Tbsp. Fried Onions. Spread 2 Tbsp. Bacon-Peach Jam onto top half of roll; place on burger.
