PLACE pudding mix and milk in 12-quart bowl of electric mixer fitted with paddle attachment. Beat on low speed 30 sec. or just until combined, scraping side of bowl as needed. Beat on medium speed 2 min. Refrigerate at least 30 min. before using. (Or, for trial recipe combine pudding mix and milk in small bowl. Beat with wire whisk 2 min. or until well blended. Refrigerate at least 5 min.)
FOR each serving: Place 3 cookies on dessert plate; top with layers of about 1/2 cup of the prepared pudding, 1-1/2 tsp. of each of the cherries and 2 Tbsp. of the whipped topping.
