OPEN PIT Original Restaurant Recipe Barbecue Sauce 60 fl oz 1-1/2 qt.
roasted red peppers, pureed 24 fl oz 3 cups
Hot smoked paprika - 1 Tbsp.
Sliders
unsalted butter 8 oz. 1 cup
red bell peppers, cut into rings 4.5 lb. -
yellow onions, sliced, separated into rings 4.5 lb. -
lean ground beef, shaped into 1.5-oz. patties 13.5 lb. 144 each
unsplit slider buns, cut horizontally into thirds - 72 each
smoked cheddar cheese, cut into 1-oz. slices 4.5 lb. 72 slices

Directions

FIRE-ROASTED Red Pepper Sauce: Mix ingredients in saucepan; cook on medium heat 15 min., stirring occasionally.

SLIDERS:
MELT butter in saute pan. Add pepper rings and onions; saute until tender. Cook meat patties until medium (160ºF) or desired doneness. Set aside.

FOR each 3-serving portion: Spread 1 Tbsp. Fire-Roasted Red Pepper Sauce onto bottom of each of 3 buns. Top each with 1 burger, 1 cheese slice and middle section of bun; spread with additional 1 Tbsp. pepper sauce. Cover each with second burger, 2 oz. cooked vegetables and top of bun. Secure with toothpicks.
