COAT 24 (4 oz.) ramekins (or 12 ramekins for trial recipe) with a thin layer of butter. Sprinkle with granulated sugar.
SIFT powdered sugar and cream of tartar into a bowl; set aside.
WHIP egg whites on medium speed until very frothy. Add powdered sugar mixture; whip on medium-high speed until soft peaks form.
HEAT the DELIGHTS in a large bowl in the microwave or over a pot of simmering water, until slightly warm to the touch (about 90ºF). Remove from heat. Fold in the egg white mixture just until incorporated. Do not over mix.
FILL each ramekin with 2.5 oz. of batter. Smooth tops with an offset spatula. Place ramekins into a prepared water bath. Bake in a standard oven at 375ºF for 30 min., or until the souffles are puffed. Serve immediately.
