SCALE 1 lb. cheesecake batter into each crust. Pour remaining batter into bowl. Stir in extract and food coloring. Swirl 8 oz. green batter into each filled pie crust.
BAKE in 300ºF standard oven 30 to 35 min. or until centers are almost set. Cool completely, then refrigerate.
FOR each serving: Cut each pie into 8 wedges.
HEAT Philly Delights until pourable. Drizzle 1 Tbsp. chocolate onto serving plate; top with 1 cheesecake slice. Garnish with 2 Tbsp. whipped topping, 1 tsp. cherries and 1 mint sprig.
