COMBINE 2 cups pineapple and 1/4 cup barbecue sauce (or 1/2 cup pineapple and 1 Tbsp. barbecue sauce for trial recipe); set aside.
BRUSH each dough piece with 1/2 Tbsp. barbecue sauce. Fill each with 1 Tbsp. each ham and pineapple mixture, and 2/3 Tbsp. cheese. Fold dough over filling into half-circle; crimp dough to seal. Place on parchment paper-lined sheet pans.
BAKE in 350ºF standard oven 10 to 15 min. or until golden brown.
MEANWHILE, prepare Barbecue Salsa by combining ingredients. Serve 2 empanadas with 1 Tbsp. Barbecue Salsa.
