Ingredients Weights Measures
Honey Dijon Sauce (recipe follows) 1 lb. + 4 oz. cups
focaccia bread, split - 48 each
leaf lettuce 2 lb. 48 pieces
dried cranberries 1 lb. + 8 oz. 1-1/2 qt.
oven-roasted turkey breasts, thinly sliced 6 lb. -
Granny Smith apples, thinly sliced 3 lb. 144 slices


FOR each serving: Spread 1 tsp. of the Honey Dijon Sauce onto each of 2 bread halves. Cover bottom half of bread with 1 lettuce leaf. Top with 2 Tbsp. cranberries, 2 oz. turkey and 3 apple slices. Cover with top of bread. Cut diagonally in half to serve.
