Island BBQ Sauce

 
Yield:
about 1-1/4 gal. or 176 servings, 2 Tbsp. each

Ingredients

brown sugar, firmly packed 1 lb. + 12 oz. 3-1/2 cups
canned crushed pineapple, drained 3 lb. + 8 oz. 6-3/4 cups
soy sauce - 2/3 cup
OPEN PIT Original Restaurant Recipe Barbecue Sauce 9 lb. 1 bottle
ground ginger - 2 Tbsp.

Directions

MIX all ingredients in saucepan; bring to boil on medium-high heat. Reduce heat to medium-low; simmer 10 minutes, stirring occasionally.

STORE in tightly covered container in refrigerator until ready to use.

Note
Sauce can be used as a basting sauce for grilled fish, chicken, duck or pork.
Serving Suggestion
To serve as a wrap sandwich, heat 3 lb. sliced cooked chicken or pork with 1 qt. prepared sauce. For each serving, spoon 4 oz. of the meat mixture down center of large flour tortilla; top with lettuce and chopped bell peppers. Roll up, folding in sides of tortilla as tortilla is rolled up to completely enclose filling. Makes 12 servings, 1 wrap each.
