TOSS leeks and stuffing until well blended. Add sauce; mix well.
PLACE 24 fillets on each of 2 parchment lined full sheet pans. (Or, use 1 parchment lined half sheet pan for trial recipe.) Top each fillet with about 2 Tbsp. of the leek mixture.
BAKE in 300°F-convection oven for 8 to 10 minutes or until fish flakes easily with fork.
