Marinated Cucumber and Tomato Salad

Ingredients

Medium cucumbers 5 lb. 10 each
Medium tomatoes 5 lb. 15 each
Red onions, halved, thinly sliced 1 lb. 1-1/4 qt.
KRAFT Balsamic Vinaigrette Dressing 2 lb. 1-1/4 qt.

Directions

CUT cucumbers in half lengthwise. Scoop out insides; discard. Cut cucumber halves diagonally into 1/2-inch-thick slices.

CUT tomatoes in half; remove seeds. Cut each half into 5 or 6 wedges.

TOSS cucumbers, tomatoes and onions with dressing. Season with salt and pepper to taste. Cover. Refrigerate until ready to serve.

TIP
Garnish each serving with 1-1/2 oz. crumbled feta or goat cheese.
Substitute KRAFT Sun Dried Tomato Oregano Dressing for the balsamic vinaigrette dressing.
