Mediterranean Vegetable Wrap

Ingredients Weights Measures
cucumbers, peeled, seeded and chopped 1 lb. + 8 oz. 1-1/2 qt.
red peppers, chopped 1 lb. + 8 oz. 1 qt.
green onions, sliced 3 oz. 1-1/2 cups
sliced black olives 3 oz. 3/4 cup
KRAFT Signature Sun Dried Tomato Oregano Dressing 1 lb. + 8 oz. 3 cups
flour tortillas (10 inch) - 48 each
romaine lettuce leaves - 96 each
hummus 12 lb. 1-1/2 gal.


MIX cucumbers, peppers, onions, olives and dressing until well blended; cover. Refrigerate until ready to use.

FOR each serving: Place 2 lettuce leaves on tortilla; top with 1/2 cup of the hummus and 2 Tbsp. of the cucumber mixture.

FOLD in side of tortilla, then roll up tightly from bottom. Wrap in paper wrap, then cut diagonally in half to serve.

Kraft Kitchens Tips

For a heartier sandwich, add 1 lb. shaved LOUIS RICH Turkey Bulk Oven Roasted (or 1/2 lb. for the full recipe) to the filling ingredients.
Prepare as directed, using eggplant- or roast pepper-flavored hummus.
Cucumber mixture can be stored, covered, in refrigerator up to 2 hours.
