If tortillas are slightly dry, microwave tortillas for 5 to 10 seconds or until softened. This will help to prevent the tortillas from cracking when they are rolled up.
To roast fresh garlic, cut tops of heads off, then place upright in roasting pan. Drizzle each head with about 1 Tbsp. olive oil; cover with foil. Roast in 350°F-convection oven for 35 to 40 minutes or until insides of heads are completely softened. Cool completely before using.
