Poblano Pork Fritters with Barbecue-Beer Dipping Sauce

Barbecue-Beer Dipping Sauce
KRAFT Sweet Honey Barbecue Sauce 6 lb. 2-1/4 qt.
dark beer 24 oz. 3 cups
cilantro, chopped - 1 cup
poblano chiles, roasted, peeled, seeded and minced 9 oz. 1 cup
lime juice - 3 Tbsp.
flour 1 lb. + 5 oz. 4-1/2 cups
corn muffin mix 1 lb. + 9-1/2 oz. 4-1/2 cups
kosher salt - 1 Tbsp.
eggs - 6 each
milk 18 oz. 2-1/4 cups
butter, melted 6 oz. 3/4 cup
green onions, finely chopped 4-1/2 oz. 1 cup
poblano chiles, roasted, peeled, seeded and minced 6 oz. 3/4 cup


PULLED Pork: Season meat with salt and pepper. Heat oil in large skillet on medium heat. Add meat; cook until evenly browned, turning occasionally. Transfer meat to full-hotel pan (or to half-hotel pan for trial recipe). Mix water, beer and barbecue sauce. Pour over meat; cover pan with foil. Bake in 325ºF-standard oven 2-1/2 to 3 hours or until meat is tender, basting occasionally with liquid in pan. Cool slightly; shred meat. Chop meat; cover and set aside. (Note: You will have about 4-1/2 cups chopped meat.)

BARBECUE-BEER Dipping Sauce: Mix barbecue sauce and beer in saucepan. Stir in poblanos, cilantro and lime juice; cook until heated through, stirring occasionally.

MIX flour, dry muffin mix and salt in large bowl; set aside. Beat eggs, milk and butter with whisk until well blended. Add to flour mixture; mix well. Stir in Pulled Pork (or just 1-1/2 cups Pulled Pork for trial recipe) and all remaining ingredients.

FOR each serving: Use #50 scoop to portion out batter for each Fritter; cook 4 fritters at a time in 330ºF-deep fryer 2 to 3 min. or until golden brown. Drain on paper towels. Serve with 1/4 cup of the Barbecue-Beer Dipping Sauce.

Make Ahead
Batter for fritters can be prepared ahead of time. Store, tightly covered, in refrigerator up to 24 hours before using to make fritters as directed.
Store leftover Pulled Pork for trial recipe in refrigerator until ready to use for another recipe.
