GINGERED Peach BBQ Sauce: Combine all ingredients in saucepot. Bring to simmer on medium heat, stirring occasionally. Remove from heat; set aside.
FOR each serving: Brush 2 chops with 1/2 Tbsp. oil. Place on a sizzle platter. Bake in 450ºF standard oven 5 min.
BRUSH chops with 1 Tbsp. Peach BBQ Sauce. Bake an additional 5 to 8 min. or until sauce is caramelized and internal temperature reaches 145ºF. Remove from oven; let rest 3 min.
MEANWHILE, toss 1/2 cup each of the watermelon, tomatoes and basil with 1 Tbsp. dressing.
PLATE 2 pork chops with 1-1/2 cups watermelon salad on the side.
