minced garlic 1-1/2 oz. 6 Tbsp.
sugar 1-1/2 oz. 6 Tbsp.
ground white pepper 1-1/2 oz. 6 Tbsp.
chili powder 1-1/2 oz. 6 Tbsp.
sesame oil 1-1/2 fl oz 3 Tbsp.
soy sauce 1-1/2 fl oz 3 Tbsp.
ground ginger - 2 Tbsp.
Pork Bellies
pork bellies, 1-1/2 lb. each 9 lb. 6 each
flour 1-1/2 lb. 1-1/2 qt.
salt - 1 Tbsp.
ground black pepper - 1 Tbsp.
KRAFT Sweet Honey Barbecue Sauce 9 fl oz 1 cup + 2 Tbsp.
fresh jalapeño peppers, halved, seeded 6 oz. 6 each
green onions, each trimmed to 4-inch length 4 oz. 12 each
navel oranges, peeled, each cut into 6 slices 15 oz. 4 each
limes, peeled, each cut into 4 slices 12 oz. 6 each
black peppercorns 12 oz. 3/4 cup

Directions

SEASONING Mixture: Mix ingredients until well blended.

PORK Bellies: Rub Seasoning Mixture onto all sides of pork bellies. Place each in separate medium 3-mL-thick food storage bag. Top each pork belly with 1 jalapeno pepper piece, 1 onion, 2 orange slices, 2 lime slices and 1 Tbsp. peppercorns.

SEAL bags using a vacuum sealer set on the highest setting. Place in circulator bath set at 160ºF. Cook 16 hours. When cooking is complete, place bags in ice bath to stop further cooking. Refrigerate until ready to use.

REMOVE pork bellies from bags; discard bags and peppers, onions, fruit and peppercorns. Cut each pork belly into 6 strips. Combine 1 cup flour with 1/2 tsp. each salt and black pepper; use to evenly coat pork belly strips.

HEAT oil in deep fryer to 350ºF. Add pork belly strips; cook 3 to 4 min. or until golden brown. Drain.

HEAT grill to medium-high heat. Drizzle 3 Tbsp. barbecue sauce over pork belly strips; toss to evenly coat. Grill 1 min. on each side or until caramelized. Serve 3 strips per plate.

Serve with an Asian coleslaw made with julienned pea pods and jicama, a chiffonade of Napa cabbage and shredded carrots tossed with a spicy Asian vinaigrette.
