Ingredients

Grilled boneless skinless chicken breasts, chopped 7 lb. + 8 oz. 1-3/4 gal.
cooked long-grain white rice 15 lb. 1-7/8 gal.
GREY POUPON Bistro Sauce 3 lb. + 12 oz. 1-3/4 qt.
sun-dried tomatoes in oil, chopped 2 lb. 1 qt.
green onions, chopped 8 oz. 1 qt.
romaine lettuce, shredded 3 lb. + 12 oz. 3-3/4 gal.
flour tortillas (10 inch) - 60 each

Directions

MIX chicken, rice, bistro sauce, tomatoes and onions; cover. Refrigerate at least 1 hour to allow flavors to blend.

FOR each serving: Place 1 cup of the lettuce on bottom half of tortilla; top with 3/4 cup of the chicken mixture. Fold sides of tortilla in from center; roll up tightly from bottom. Cut diagonally in half to serve.

As an alternative to chips, serve with assorted cut-up fresh vegetables or fruit.
