St. Patty’s White Chocolate Pie

Ingredients

chocolate chip cookies (2 inch), finely crushed 3.25 lb. 3 qt.
butter, melted 8 oz. 1 cup
white chocolate, finely chopped, divided 2 lb. + 2 oz. 5-1/3 cups
Hot prepared JELL-O Vanilla Pudding & Pie Filling 5 lb. 2 qt.
chocolate chip cookies (2 inch), coarsely broken 3 oz. 8 each
green food coloring - 40 drops
prepared DREAM WHIP Whipped Topping - 3 qt.

Directions

FOR each pie: Mix 3 cups (13 oz.) cookie crumbs and 1/4 cup (2 oz.) butter until well blended; press onto bottom and up side of 9-inch pie plate. Refrigerate until ready to fill.

COMBINE 3-1/2 oz. white chocolate and 2 cups hot pie filling; stir until chocolate is completely melted. Pour into prepared crust. Refrigerate several hours or until filling is firm.

MELT 5 oz. of the remaining chocolate; cool to 90ºF. Spread onto parchment paper-lined sheet pan to 1/8 inch thick; top with 2 broken cookies. Let stand until chocolate is firm. Coarsely break into pieces.

STIR food coloring into whipped topping. Spread 3 cups whipped topping over pie, mounding slightly in center. Garnish with white chocolate-cookie pieces.
