ICE Cream Mixture: Beat milk and pudding mix until well blended. Combine pudding mixture, ice cream and cheesecake batter until fully incorporated. Cover. Freeze until ready to use.
GREEN Chocolate Sauce: Mix ingredients.
ASSEMBLY: PLACE 1 #8 scoop Ice Cream Mixture between 2 cookies. Press down carefully to flatten. Roll edge into chocolate chips, using about 1 Tbsp. per sandwich.
DRIZZLE 1 Tbsp. Green Chocolate Sauce onto serving plate. Top with 1 ice cream sandwich, 1/4 cup whipped topping and a cherry.
