apricot jam 10 oz. 1-1/4 cups
GREY POUPON Classic Dijon Mustard 2 oz. 1/4 cup
canned chipotle peppers in adobo sauce, finely chopped 2 oz. 1/4 cup
cracked black pepper - 1-1/2 tsp.
multi-grain bread slices 4-1/2 lb. 48 slices
VELVEETA Pasteurized Process American Cheese Food - Pre Cut 120 Slices 2 lb. 48 slices
boneless skinless chicken breasts, roasted, thinly sliced 3-3/4 lb. 12 each
baby spinach leaves, tightly packed 8 oz. 2 qt.


SWEET-HEAT Apricot-Dijon Spread: Mix ingredients until well blended. Refrigerate until ready to use.

FOR each serving: Spread 2 bread slices evenly with 2 Tbsp. Sweet-Heat Apricot-Dijon Spread. Top 1 bread slice with 1 cheese food slice, 2-1/2 oz. chicken, 1/3 cup spinach and second cheese food slice. Cover with remaining bread slice.

HEAT flat-top griddle to 350ºF; spray with cooking spray. Add sandwich; cover with dome lid. Grill 2 min. on each side or until cheese is melted and sandwich is golden brown on both sides. Cut diagonally in half.

If the apricot jam has large chunks of fruit, puree it in a food processor before using.
