MIX cream cheese, applesauce and cinnamon until blended. Refrigerate until ready to use.
COMBINE remaining ingredients; shape into 24 patties (or shape into 1 patty for trial recipe), using a heaping 1/2 cup potato mixture for each.
FOR each serving: Cook 1 patty in nonstick skillet, sprayed with cooking spray, on medium heat 4 min. on each side or until golden brown on both sides. Serve with about 1 Tbsp. applesauce mixture.
