Ingredients Weights Measures
OPEN PIT Original Restaurant Recipe Barbecue Sauce 3 lb. + 8 oz. 1-1/4 qt.
brown sugar, packed 5 oz. 1 cup
soy sauce - 6-1/2 Tbsp.
cilantro, chopped - 3-1/2 Tbsp.
gingerroot, peeled, minced 3 oz. 2/3 cup
garlic powder - 2-1/2 tsp.
ground red pepper (cayenne) - 3/4 tsp.
chicken drumettes 15 lb. 240 each
green onions, chopped 5 oz. 1-1/4 cups


MIX all ingredients except chicken and onions; set aside.

PLACE chicken in single layer in parchment paper-lined full-sheet pans (or in lined half-sheet pan for trial recipe). Bake in 325ºF-convection oven 15 min. or until done (165ºF).

BRUSH chicken with barbecue sauce mixture. Bake an additional 5 min. Sprinkle with onions.
