Thai BBQ Sauce

1 gal. or 128 servings, 2 Tbsp. each


Ingredients Weights Measures
OPEN PIT Original Restaurant Recipe Barbecue Sauce 9 lb. 1 bottle
brown sugar, firmly packed 1 lb. + 8 oz. 3 cups
soy sauce - 1-1/2 cups
chopped cilantro or green onions 1-1/2 oz. 3/4 cup
ground red pepper (cayenne) - 1 Tbsp.
ground ginger - 1 Tbsp.
garlic powder - 1 Tbsp.


MIX all ingredients in saucepan; bring to boil on medium-high heat. Reduce heat to medium-low; simmer 10 minutes, stirring occasionally.

STORE in tightly covered container in refrigerator until ready to use.

Sauce can be used as a basting sauce for grilled or slow-cooked meat, or as a dipping sauce.
Serving Suggestion
Thai Chicken Roll-Ups: Heat 2-1/4 lb. sliced cooked chicken with 3 cups prepared sauce. Spoon onto 12 large flour tortillas; top evenly with the meat mixture, lettuce leaves, sliced cucumbers and chopped bell peppers. Fold ends of tortillas in, then roll up. Makes 12 servings, 1 wrap each.
