Thai Chicken or Shrimp Skewers

Ingredients Weights Measures
MIRACLE WHIP Dressing 2 oz. 1/4 cup
creamy peanut butter 2 oz. 1/4 cup
chicken broth 2 oz. 1/4 cup
honey 1 oz. 2 Tbsp.
soy sauce 1 oz. 2 Tbsp.
garlic powder 1 oz. 1-1/2 tsp.
boneless skinless chicken breasts, cut into bite-size pieces, or uncooked deveined peeled extra-large shrimp (16 to 20 count) 3 lb. -


MIX all ingredients except chicken or shrimp in large bowl until well blended. Add chicken or shrimp; toss to coat. Cover. Refrigerate at least 2 hours to marinate. If using shrimp, marinate for a maximum of 1 hour. Remove chicken or shrimp from marinade; discard marinade.

THREAD 2 oz. chicken or shrimp onto each of 24 skewers (or onto four skewers for trial recipe). Place in single layer in sheet pans sprayed with cooking spray.

BROIL 4 min. on each side or until chicken is cooked through or until shrimp turn pink.
