PHILADELPHIA Neufchatel Cheese, softened 1 lb. + 8 oz. 3 cups
Cajun seasoning - 3 Tbsp.
red onions, sliced 3 lb. 3 qt.
green peppers, thinly sliced 3 lb. 3 qt.
Italian seasoning - 3 Tbsp.
chicken broth - 3 cups
flour tortillas - 48 each
hickory-smoked turkey breast, cut into 1 oz. slices 6 lb. 96 slices
olive oil 8 oz. 1 cup

Directions

MIX cream cheese and Cajun seasoning until well blended.

SAUTE onions and peppers in chicken broth with Italian seasoning.

FOR each serving: Spread 1 tortilla with 1 Tbsp. of the Neufchatel mixture; top with 1/2 cup vegetable mixture and 2 turkey slices. Fold tortilla in half.

HEAT oil on griddle at 350°F. Add quesadilla; cook until golden brown on both sides.
