MIX cream cheese and Cajun seasoning until well blended.
SAUTE onions and peppers in chicken broth with Italian seasoning.
FOR each serving: Spread 1 tortilla with 1 Tbsp. of the Neufchatel mixture; top with 1/2 cup vegetable mixture and 2 turkey slices. Fold tortilla in half.
HEAT oil on griddle at 350°F. Add quesadilla; cook until golden brown on both sides.
